Ingredients

An easy to make, delicious and filling stew.

  • 1 cup rinsed lentils
  • 1/2 cup pearl barley
  • 2 sticks celery chopped into slices
  • 2 carrots sliced
  • 1 onion chopped
  • 1/4 teaspoon chilli flakes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ground cumin
  • 6 cups chicken stock using fat free stock cubes
  • 1/2 can butter beans drained
  • 1 chicken breast cooked and cut into bite-sized pieces
  • 1 teaspoon arrowroot and some water
  • Salt and pepper to taste

Method

  • 1 Place all ingredients except butter beans, chicken and arrowroot into a pot and bring to a simmer, once simmering put on the lid and cook until lentils and barley are soft - about 40 minutes
  • 2 Add drained butter beans and cooked chicken
  • 3 Combine arrowroot and water into a paste and add to stew
  • 4 Bring to boil and then simmer for a further 10 minutes

Serve with baguette.
