Ingredients

Delicious and creamy layered potato to serve with whatever you fancy!

Serves 4

  • Two large (baking) potatoes
  • One medium onion
  • Half a leek
  • Small aubergine
  • Three cloves garlic
  • Half pint stock (vegetable or whatever)
  • Mixed (or your favourite) herbs

Method

  • 1 Thinly slice the potatoes, onion,leek and aubergine chop the garlic
  • 2 Layer alternating slices of potato and onion/leek/aubergine/garlic/herbs in a pyrex dish with a lid
  • 3 Pour over the stock and cover with the lid
  • 4 Microwave on full power for 20 minutes
  • 5 Leave to stand for 5 minutes
  • 6 Check all the liquid has been absorbed - if not, microwave some more

Serve as potatoes with whatever you fancy!
